Ruffle Top  –   This top is really cute. I like the idea that it can be dressed up or down.

Leopard Booties – Sadly these leopard booties are sold out in my size, but they are pretty and would look really good with the ruffle top above.

Bag  –  This bag is both beautiful and dreamy.

Meatball Recipe – I made meatballs last week and then I came across this recipe. Because I love meatballs, I am definitely trying this recipe.

New Blog Name and Friday Favorites

Hi Everyone!

I hope that you all had a great week. If  you have not noticed, I decided to change the name of this blog. I decided to change it to a name that is more of a reflection of who I am. What do you all think? Feel free to let me know in the comments below and be on the look out for my new Instagram handle! 🙂

Scalloped Sweater – The detailing on these sweater is so cute. It comes in a few other colors but I liked the ivory color the best.

Louis Vuitton St. Michel in Coquelicot   – Just another beautiful bag that I found and added to my wish list. It also comes in a few other colors.

Sorel Tofino Boot – I really do not want to think about winter, but I do really need a new pair of winter boots. I have added this pair to my winter survival list. They are both cute and practical which is what I am going for.

Squash Recipes – Recipes that look delicious and will keep you warm? Sounds good to me!

Friday Favorites

  4. Top. I have been struggling with this bell-sleeve trend. Every single top that I’ve tried on just does not look right on me. I saw this one though and may give it a try. Plus it is on sale. 🙂

Thyme Chicken

Hi Everyone!

I hope that you are all having a great week so far. It has been really warm here this week and I have been enjoying every minute of it. Today I wanted to share an easy chicken dinner that I make a lot. It is easy, healthy, and quick. Perfect for during the week too. 🙂

 

Ingredients:

  • 2 chicken breasts
  • 1 tbsp of extra virgin olive oil
  • 1 cup of low-sodium chicken broth
  • Juice from one lemon
  • 1 tbsp of flour
  • 1 tsp of thyme
  • salt and pepper to taste

Instructions:

  1. Heat some  extra virgin olive oil over medium heat.
  2. Cook your two chicken breasts 5-6 minutes on each side.
  3. Add your chicken broth, lemon juice, flour, salt, pepper, and thyme.
  4. Simmer for 15 minutes.
  5. Serve and enjoy! 🙂

Not pictured are the string beans that we had with it. I served it with brown rice but roasted potatoes would also be good or any starch or vegetable of your choice.

Vegetarian Chili

Hi Everyone!

I hope that you are all having a great week so far. Last week I made a vegetarian chili for the first time and I wanted to share the recipe today. This recipe is easy, healthy, and delicious.

 

Ingredients:

  • 1 can of white kidney beans
  • 1 can of red kidney beans
  • 1 can of black beans
  • 1 can of green chilies
  • 1 red pepper
  • 1 tomato
  • 1 onion
  • 1 tablespoon of cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cilantro
  • 1 cup of vegetable broth

Instructions:

  1. Over medium heat in a large pot, heat some extra virgin olive oil.
  2. Cook the red pepper and onions.
  3. Add your green chilies and tomatoes.
  4. Add your white kidney beans, red kidney beans, and black beans.
  5. Add your cumin, chili powder, smoked paprika, and cilantro.
  6. Add your vegetable broth.
  7. Stir everything together and let it simmer for 20 minutes.
  8. Serve over brown rice or alone.

Bison Chili

Hi Everyone!

I hope that you are all having a great week so far. Today I wanted to share Chris’s bison chili recipe. I love eating chili during the winter. It is so warm and comforting.  I have a few different chili recipes that I like to make one this one has been a favorite around here lately. First off, if you’ve never tried bison, it is tasty. It is very lean and is a great alternative to beef.

 

Ingredients:

  • 2/3 pound of ground bison
  • 1 chopped onion
  • 1 jalapeño with the seeds taken out and chopped.
  • 1 can of chopped tomatoes
  • 1 packet of chili mix
  • 1 can of black beans
  • 1 can of red kidney beans
  • 1 can of pinto beans

Instructions:

  1. In a dutch oven or large pot, heat some olive oil over medium heat.
  2. Cook the chopped onion until tender and then add the jalapeño.
  3. Add the bison and cook until browned. Then drain the access liquid from the bison.
  4. Add the chili mix, black beans, chili beans, and can of tomatoes.
  5. Stir periodically and simmer for 20 minutes.
  6. Serve over brown rice with some avocado on top.

 

This is an easy meal and great for during the week. It is also healthy and delicious. Feel free to give it a try some time and I hope that you all enjoy it.

Pumpkin Bread

Hi Everyone!

I hope that you are all having a great week so far. Today I wanted to share a pumpkin bread recipe. I found the original recipe here, but I made some changes to it to personalize and also to accommodate Chris’s allergies. I also cut it in half.

Ingredients: 

1 15 ounce can pumpkin puree
1 egg.
1 cup extra virgin olive oil

1/3  cup water
1 cup of sugar

1 cup of brown sugar
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. ground nutmeg
½ tsp. ground cloves
¼ tsp. ginger
1/4 cup of chopped walnuts

1 bag of pumpkin seeds (optional)

 

Directions: 

  1. Pre-heat your oven to 350 degrees.
  2. Grease a 7×3 loaf pan.
  3. Mix together pumpkin puree, the egg,  extra virgin olive oil, water and sugar until well blended in a large bowl.
  4. Add the remaining ingredients and mix together.
  5. Pour mixture into your greased loaf pan.
  6. Bake for 1 hour.
  7. Sprinkle pumpkin seeds on top.
  8. Serve and enjoy with your favorite warm beverage. 🙂

I used these delicious pumpkin spiced seasoned pumpkin seeds from Trader Joe’s that are SO good. If you can’t get those, just use regular. This is a great fall recipe that I hope you will all enjoy.
