It is so warm and comforting.  I have a few different chili recipes that I like to make one this one has been a favorite around here lately. First off, if you’ve never tried bison, it is tasty. It is very lean and is a great alternative to beef.

  • 1 jalapeño with the seeds taken out and chopped.
  • 1 can of chopped tomatoes

  • 1 can of red kidney beans
  • 1 can of pinto beans

Instructions:

  1. In a dutch oven or large pot, heat some olive oil over medium heat.
  2. Cook the chopped onion until tender and then add the jalapeño.
  3. Add the bison and cook until browned. Then drain the access liquid from the bison.
  4. Add the chili mix, black beans, chili beans, and can of tomatoes.
  5. Stir periodically and simmer for 20 minutes.
  6. Serve over brown rice with some avocado on top.

It also perfect for summer or for whenever you want something healthy and quick for dinner.

Hi Everyone!

I hope that you are all having a great week so far. Chris made a delicious pasta salad over the weekend and I wanted to share it with you all today. I do pretty much all of the cooking here, but Chris does cook sometimes and he is also in charge of the grill.

This is a healthy, delicious, and simple recipe. It is also perfect for summer and for when you want a pasta salad that does not have a mayo sauce.

Ingredients:

– 1 chopped red pepper

– 1 bunch of kale washed and chopped.

– 2 cloves of garlic

– 1/2 a pound of whole wheat pasta

–  1 tablespoon of lemon juice

– 1 tablespoon of extra virgin olive oil

– Parmesan cheese to taste

– Salt and pepper to taste

Instructions:

1. Place your chopped kale into a bowl and set aside.

2. Cook your pasta all the way through. I always cook whole wheat pasta for ten minutes.

3. Heat a tablespoon of extra virgin olive oil in a skillet. Over medium heat, cook the chopped garlic and red peppers.

4. Transfer the pasta and red pepper into a large bowl.

5. Add your lemon juice, parmesan cheese, salt and pepper. Mix everything together.

6. Cover bowl with plastic wrap and place in the refrigerator for a few hours.
